    • Provided is an antioxidant which contains ginger oil which has effects of masking an unpleasant smell and suppressing the increase of a peroxide, which are stronger than ginger oil which is produced by a steam distillation method. The antioxidant for fat, oil, or complex lipid which contains ginger oil has at least one peak detected within 5 minutes before the peak of neral and has at least three peaks detected within 7 minutes after the peak of geranial when being provided for a high performance liquid chromatography analysis of following analysis conditions. The present invention keeps: an ethanol column which contains 0.1 %(w/v) of ginseng oil; an oven temperature of an ODS column (a particle diameter of 5 micrometers, inner diameter of 4.6 mm x length of 250 mm); a detection wavelength at 40°C; a mobile phase of 228 nm; a flow speed of 1 mL/minutes; and concentration gradient programm (1) initial condition: 70% of liquid A and 30% of liquid B, (2) 0-20 minutes: linearly changes to 10% liquid A and 90% liquid B from initial condition, and (3) 20-40 minutes: maintains 10% liquid A and 90% liquid B.
