摘要： The present invention relates to methods for preparing cereal-based beverages. The present invention provides, for example, methods for steeping and germination of cereal grain under continuous aeration. Particularly, the present invention provides methods for heating the germinated cereal grains prior to wet milling of germinated cereal grains and direct transfer of the germinated grain, without drying, to the brewery for further processing. Compared to current methods the methods of the present invention significantly reduce water consumption, energy consumption and transport need.

摘要： According to the present invention, fat and caloric content of sauces can be reduced by the replacement of a portion fat content normally found in sauces with an amount of dietary fiber. The result is that fat and caloric content of sauces can be manipulated with minimal effect on taste and texture. Furthermore, the sauces can further comprise functional foods that increase health and nutritional benefits of the sauces. The functional foods can be added individually, and in any combination thereof. Hence, in addition to reducing fat and caloric content of sauces by replacing a portion of fat with dietary fiber gel, additional health benefits can be achieved with compositions that include functional foods.

摘要： The invention relates to a method and an installation for continuously malting cereal grains. According to the invention, the granular material passes downwards from a feeder device onto mainly diagonal conveyer lines which change direction, moving downwards by force of gravity, forming a flow of material. As it does so, it is treated with aeration, cooling, damping and drying media, before being discharged through a discharge device as air-dried or finished malt. The flow of material forms a layer of material moving downstream. In the transfer area between two conveyor lines, this layer is divided in sections into an upper sub-flow and a lower sub-flow. These sub-flows then become one again. This continuous process presents considerable economic advantages in terms of the space requiring conversion and energy requirements.

摘要： The present invention relates, generally, to germination and preparation of aqueous extracts of cereals (e.g. prepared through mashing), including processes used to produce beer. The invention thus provides methods for fast germination and preparation of aqueous extracts of cereals. The methods significantly speed up the process of preparing wort for production of cereal-based beverages, while maintaining the potential for preparing said wort with low levels of β-glucan. The instant invention is equally applicable to the germination and preparation of aqueous extracts of other cereal grains - including rice, sorghum, maize, millet and wheat - as well as brewing processes comprising adjuncts.

摘要： A produce packaging container having an arched bottom surface and raised feet is described herein. The containers each can include upper ventilation slots and lower ventilation channels. The lower ventilation channels are formed by arching the bottoms of the baskets to form cooling flow channels that direct cool air under the bottoms of the containers. Raised supports enable bi-directional cooling airflow to pass underneath the baskets in at least two transverse directions. Bi-directional airflow is also achieved in the upper portion of the baskets through the ventilation slots.

摘要： Shelf-stable food products are provided in the form of at least partially hydrated foods having a water activity of at least about 0.65 and with a sufficient amount of an added acidulent to give the food an acidic pH of up to about 6. The acidulated foods are non-aseptically packaged in a substantially moisture-tight package, so that the resultant food product is capable of ambient temperature storage for at least about 30 days without spoilage of the food. Suitable foods include pastas and other grain or grain-derived products.
