    • The invention relates to a nutraceutical dough obtained from a mixture of native maize varieties (Chalqueño, blue VC-42 (Bolita), red Cónico), the uses thereof and the production method of same. The typical uses of the dough include the formulation of a nutraceutical blue tortilla from mixtures of native blue/purple grain maize varieties and the incorporation of a functional ingredient also obtained from a native variety of maize. The tortilla of the invention is characterised in that it contains twice as many antioxidants as a traditional tortilla, without its sensory or nutritional qualities being affected. The nutraceutical blue tortilla provides an option for substantially increasing the ingestion of antioxidants among the Mexican population using a popular consumer product. A second use of the nutraceutical dough obtained from the mixture of native maize varieties (Chalqueño, blue VC-42 (Bolita), red Cónico) consists in producing maize-based fried snacks by frying the dough in the traditional manner at high temperatures in oil or butter so as to brown the snacks, the composition of which includes the natural colour of the maize together with the nutraceutical properties thereof.
