    • PURPOSE: A producing method of edible oil and fat with reduced 3-MCPD-FS is provided to reduce the amount of the 3-MCPD-FS having the genetic toxicity or the carcinogenic risk. CONSTITUTION: A producing method of edible oil and fat with reduced 3-MCPD-FS comprises the following steps: adding an absorber to the refined edible oil and fat after a deodorization process; and filtering the edible oil and fat. The edible oil and fat is selected from the group consisting of rape seed oil, rice bran oil, safflower oil, sunflower seed oil, cottonseed oil, peanut oil, olive oil, palm oil, coconut oil, processed oil and fat, and their mixture. The processed oil and fat contains more than 10% of diacylglycerol. The absorber is selected from white clay, activated charcoal, or their mixture.

    • Margarine oil having a low trans fatty acid content prepared by enzymatic transesterification and its preparation method are provided to obtain the environmentally-friendly margarine oil having the same physical properties as partially hydrogenated oil. Margarine oil having a low trans fatty acid content is prepared by mixing palm oil, soybean oil, and hydrogenated oil in a ratio of 4.9~6.0:0.1~1.0:3.0~5.0, and then enzymatically transesterifying the mixture. Each raw oil has a water content of 0.02% or less before enzymatic transesterification. The margarine oil has a trans fatty acid content of 0.1~1% and a palmitic acid content of 10~27%, and its solid fat content is 0.2~3.1% at 37.8°C. In addition, the margarine oil has a triglyceride content of 99% or more and diglyceride and monoglyceride contents of 1% or less.
