摘要： The immobilized enzyme for removal of residual cyclodextrins is either a combination of an alpha-amylase and a CGTase which has been immobilized or a fungal alpha-amylase which has been immobilized. In addition to either the fungal alpha-amylase or the CGTase and alpha-amylase, a debranching enzyme can also be employed. When using a debranched enzyme, the debranched enzyme is also immobilized. By using the immobilized enzyme, the step of inactivating the enzyme is eliminated and the contamination due to the inactivated enzyme is also eliminated.

摘要： A method and apparatus for preparing essentially fat free chips such as potato chips and the like having an appearance and taste similar to conventional chips without the use of deep fat frying processes. The method of the present invention includes the steps of exposing sliced raw potatoes and the like to a high intensity microwave field that rapidly converts moisture within the slice into steam. These exposed slices are then dried by longer exposure to a lower energy microwave field. The apparatus of the present invention includes a single mode meander waveguide (14) with a microwave absorptive terminator (24) at an end of the waveguide (22) to support a standing wave field within the waveguide (14). Apertures (18) are provided along portions of the waveguide (14) to accommodate a microwave-transparent conveyor belt (20) through the waveguide (14) for transporting the potato slices (12) and the like through the waveguide (14).

These pieces are deposited on the receptacle (69) which is positioned on a scale (70). A control module (74) is coupled to the scale (70) and cutoff valve (52) to control operation of the depositing mechanism (12).

摘要： The invention relates to the production of biologically active extracts rich in vitamin C and aroma substances and resistant to light and heat. According to the process of the invention one or more plant or plant-parts containing 0.1 to 99 % by weight of natural colouring substances, acids and/or antioxidants are extracted together or separately cold and/or warm for 1 minute to several days, at a temperature of -20 DEG C to +200 DEG C, optionally at an elevated or reduced pressure, optionally in a CO2, nitrogen oxide or acetic acid atmosphere, with or without flavour or aroma substances, salts, acids, bases, sugars, water or organic solvents, and the treatment optionally is once or more times repeated. The process according to the invention enables the preparation of biologically active, light- and heat-resistant extracts rich in vitamin C, aroma substances and active ingredients from easily available plants. The extracts obtained by the process according to the invention can be used for medicines, cosmetics, foodstuffs, further as nutritives, additives to fodder, for promoting germination or as sprays for controlling insects.

摘要： An oven (10) for cooking foods, and especially for browning foods, has heated, radiant walls (18, 20). Heat may be supplied by a gas burner flame in a plenum (22) behind the walls, with products of combustion thus being isolated from the food in the oven chamber (12). In one embodiment food products are continuously conveyed through the oven chamber and, depending on oven temperature, are either cooked or simply browned in the oven by the radiant wall heat. Fats and other materials rendered from the food products, if not fully incinerated in the oven chamber, may be transferred along with exhaust air from the oven chamber to a separate combustion chamber. Steam or other inert gas is introduced to the oven chamber to minimize oxidation and prevent flame, and the steam can be produced by heat exchange with exhaust plenum gases.
