    • An embodiment of the invention is a twin-screw device for an extruder system that includes a first shaft, a second shaft, a first intake element coupled to the first shaft and including a first flight, and a second intake element coupled to the second shaft adjacent the first intake element and including a second flight. The first flight and the second flight are adapted to cooperatively create a partial vacuum that acts as a positive displacement pump to convey material when the first intake element and the second intake element are rotated in the same direction. This action, which is a function of the rotational speed of the intake elements, transforms the use of the extruder system from "feed limited" to "torque limited".

    • The method for producing an expanded, shaped pellet products with an annular cavity includes extruding a farinaceous mixture through a die orifice (50) of an extruder (40) to form a tubular extrudate. This is formed by extruding dough around and through a die insert having one or more sources for injecting air, other inert gas, or liquid into an annular cavity into a portion of the tubular extrudate. After exiting the extruder, the shaped extrudate initially expands at it exits the extruder die but is then stretched by upper roller (70) and lower roller (70) so as to substantially return the extrudate to an unexpanded state. Thereafter, the stretched extrudate is cut into shaped pellets with annular cavities. Upon being further heated, for example, in a hot air puffer, the pieces are puffed to produce expanded, shaped snack products with annular cavities without the need for a dehydration and/or conditioning step.

In a preferred form, a portion of the food mass is bled from a first substream and fed to the exit ports (40) of a second substream to create an extrudate including zones of distinct food mass. The extrudates are severed intoindividual pieces (41, 158) by a rotary cutter (36).
