    • Disclosed are rice cakes being rapidly cooked and supplying abundant nutrients as well as being produced at low costs by a simplified process, and a method of preparing such rice cakes. The method of preparing rice cakes is comprising the steps of: washing rice with water and immersing the washed rice in citric acid and DF-100-containing water for 8 hrs; finely pulverizing the water-soaked rice and mixing the resulting rice powder with a natural pigment, cowpea powder and other auxiliary materials; placing the mixture into a tray with a unique shape, filling the tray with a gas mixture to allow for long-term shelf life, and tightly sealing the tray with a nylon film; placing the tray containing the mixture into a Retort sterilizer, and carrying out simultaneously cooking and sterilization to produce rice cakes; and mildly drying the rice cakes to remove moisture present in the outside thereof, and packaging the resulting rice cakes to facilitate their transport.

    • The present invention relates to a mixture for oenological use of the type comprising tannin, characterized in that it is in the form of granules of agglomerated particles of powder having a porosity able to convey inside each granule a dissolving liquid, in particular water or wine, for causing instantaneous and complete dissolution of the mixture in said dissolving liquid. This mixture may comprise gum arabic for oenological use in association with tannin. The invention also concerns a method for production of the mixture for oenological use as described above. This method is based on the use of components in powder form and comprises the steps of: adding metered quantities of powder particles of said components into an agglomeration chamber; fluidizing said particles of powder inside said agglomeration chamber; moistening said particles of powder fluidized inside said agglomeration chamber by means of particle-like dispersion of an agglomeration fluid; agglomerating said particles of powder by means of said agglomeration fluid with consequent formation of granules; drying said granules by means of evaporation of said agglomeration fluid inside said agglomeration chamber; extracting said dried granules from said agglomeration chamber.

    • An active coloring concentrate can be prepared from the juice of cranberry and other fruits or vegetables by treating juice or homogenate with an appropriate binding matrix. Assorted ion exchange resins such as cholestyramine are effective binding matrices, but the currently preferred material is a food grade of cross-linked polyvinylpyrollidone. When appropriate binding matrices are used to concentrate active materials from cranberry, a colored solid is produced. This substance shows significant antibacterial and anti-viral properties. It can be readily consumed as a therapeutic or nutraceutical, used as a coloring agent, or it can be used topically. An additional advantage of the present method is that significant amounts of active concentrate can be produced from cranberrry presscake which is normally a waste material.
