    • The invention relates to a method and an arrangement for portion cutting of food items (2), especially meat products, into pieces of predetermined shape, such as quadratic meast pieces (4), where the method comprises the following steps: feeding of the items in a first cutting device (10) in a first feeding direction (10R), in which device (10) the items (2) are cut into strips (3) in a cuttingunit, transfer of the strips (3) from the first cutting device to at least one additional cutting device (20, 30, 40) with another feeding direction (20R, 30R, 40R) different from that of the first feeding direction (10R), and cutting in at least the one additional cutting device (20, 30, 40), in which by a cutting unit the strips (3) are cut into pieces (4) of predetermined shape, such as quadratic meast piece. Furthermore, there is disclosed the use of a cutting device in an arrangement according to the invention.

    • Method and system for monitoring the processing of items such as pieces of meat, including carcasses of pigs, calves, beeves and so on, also poultry, fish etc., where use is made of an identification for the individual animal and/or the individual item or part item. The processing involves cutting-up into smaller pieces, inasmuch as a registration of identification for a piece of meat, a carcass or the like is effected. The piece of meat is allocated to one of a multiple of workstations, inasmuch as identification for the said workstation is registered and the allocated piece of meat is processed at the workstation while use is made of visual instruction. Hereafter, a further transport is established of the whole or parts of the yield from the cutting-up of the allocated piece of meat, such as one or more cuts. The further transport is similarly registered so that traceability is established for the pieces of meat, including also for the cuts.
