    • The invention concerns a method for producing particles (20, 21) at least partly crystallized, under pressure, comprising reciprocal dissolving of at least one fluid under higher or slightly lower pressure than its critical pressure with at least one substance to be treated, in a dissolving zone (2), followed by rapid depressurization with at least one depressurizing means (12) downstream of said dissolving zone (2) so as to collect said particles (21), at least partly crystallized, in the collecting zone (3) located downstream of said depressurizing means (12), said substance to be treated comprising the butterfat. Said method is characterized in that it further consists in collecting particles (20) at least partly crystallized in the dissolving zone (2). The invention also concerns a device (1) for implementing said method.

    • The invention provides a method for forming particles of a substance, by co-introducing into a particle formation vessel, in which the temperature and pressure are controlled, of a supercritical fluid; a solution or suspension of the substance in a first vehicle; and a second vehicle which is both substantially miscible with the first vehicle and substantially soluble in the supercritical fluid, in such a way that dispersion of the solution or suspension and the second vehicle, and extraction of the vehicles, occur substantially simultaneously and substantially immediately on introduction of the fluids into the vessel, by the action of the supercritical fluid. Preferably the solution/suspension of the substance is introduced separately from the second vehicle, in such a way that contact between the solution/suspension and the second vehicle occurs either substantially simultaneously with, or immediately before, their dispersion by the supercritical fluid and extraction of the vehicles by the supercritical fluid. The method allows a high degree of control over the size, shape, crystalline form and other physico-chemical properties of the particulate product. The invention also provides apparatus for carrying out such a method, using a coaxial nozzle to introduce the fluids into the particle formation vessel, and a particulate product made using the method or the apparatus.

    • The invention provides a method and apparatus for forming particles of a substance, comprising (a) introducing into a particle formation chamber, the temperature and pressure in which are controlled, a first supercritical fluid (SCF) and a solution or suspension of the substance in a vehicle; (b) simultaneously introducing an impinging flow of a second supercritical fluid (SCF), at an angle to, and directed at, the direction of flow of the first supercritical fluid, so as to increase the amount of kinetic energy transferred to the solution or suspension; and (c) using either or both of the first and the second supercritical fluids to disperse the solution or suspension, and to extract the vehicle from it, substantially simultaneously and substantially immediately on introduction of the fluids into the particle chamber.
