    • The present invention relates to a method of making dried green-tea yellow corvinas using brine salting and, more specifically, to a method of making dried green-tea yellow corvinas using brine salting, capable of: preventing acidification of fatty acid of the dried yellow corvinas during a drying process by dipping the yellow corvinas into salt water in which green tea powder is mixed and drying the yellow corvinas; and accordingly, improving the quality of the dried yellow corvinas. The method of making dried green-tea yellow corvinas using brine salting given in the present invention includes: a first washing step of removing foreign substances on the yellow corvinas by washing the yellow corvinas; a salting step of immersing the cleaned yellow corvinas from the cleaning step into salt water and adding five to nine parts by weight of green tea powder to the 100 parts by weight of the salt water, to salt the yellow corvinas; a second washing step of taking the immersed yellow corvinas out of the salt water after the salting step and washing the yellow corvinas; and a drying step of drying the yellow corvinas cleaned in the second cleaning step.
