    • A pressurized system for dispensing carbonated beverages into an open container uses a bottom filling technique in which the outlet port of the nozzle (16) is proximate to a bottom (42) of the open container (44) when dispensing is initiated. The carbonated beverage (12) is maintained in a pressurized state within the nozzle (16) and the remainder of the system, until immediately prior to opening a valve (14) to dispense the carbonated beverage into the open container. Prior to opening valve, the pressure of the carbonated beverage nozzle is reduced to an appropriate dispensing pressure, preferably slightly above atmosphere pressure. The system also precisely controls the temperature of the carbonated beverage, preferably using an in-line zero&Dgr;T chiller (32). In addition, specialized valve configurations and operation techniques, as well as container positioning techniques, are implemented in order to achieve a desired presentation of the carbonated beverage in the open container.

    • Method and apparatus for the high speed dispensing of all beverages, and particularly carbonated beverages. The major elements of the device include a main flow control valve (3) coupled to a pressurized container (1) such as a beer keg, a positive shut-off filling nozzle (10), a pressure control valve (7) associated with the filling nozzle, and requisite control electronics and actuators to establish a dispenser operating sequence. A defined dose of beverage is dispensed by first closing the main flow valve, then briefly opening the pressure control valve, thereby lowering the hydraulic pressure in the nozzle to a desired pressure lower than that applied to the beverage container, then gently opening the beverage filling nozzle and immediately thereafter opening the main flow valve, maintaining the main flow valve in an open condition for a time required to produce a defined dose of beverage, and then rapidly closing the beverage filling nozzle while maintaining the main flow control valve in an open condition.

    • A multifunctional unit (102) includes in particular a gas management system (112) for managing dispensing and preservation of carbonated beverages such as sparkling wines and champagne. In a preferred embodiment of the invention, a gas management system (112) is configured to regulate three solenoid valves (202, 204, 206), for maintaining a first predefined pressure level inside a beverage container thereby allowing the beverage to maintain its sparkle ('pearl') and preventing oxidation of the beverage.     • A carbonated beverage (38) is conveyed from a source (12) to a closed reservoir (28) at a first pressure level. The pressure in the reservoir (28) is controlled by selectively venting gas and adding pressurized gas to the reservoir (28) to maintain the carbonated beverage (38) at a second pressure level that is less than the first pressure level and substantially greater than atmospheric pressure. The carbonated beverage (38) is dispensed from the reservoir (28) into a serving container by reducing the pressure in the reservoir (28) to substantially atmospheric pressure and then opening an outlet valve (62). During prolonged periods when dispensing is not occurring the pressure in the reservoir (28) may be increased to prevent degassing of the carbonated beverage (38). In that case, the reservoir (28) pressure is reduced to the second pressure level before another dispensing operation.
