Le procédé de l'invention de préparation d'une composition comprenant essentiellement un composé à base de vanilline et d'éthylvanilline dans un ratio molaire vanilline/éthylvanilline de 2 est caractérisé par le fait qu'il comprend une opération de co-granulation de vanilline et d'éthylvanilline mises en œuvre sous forme de poudre et en quantités telles que le ratio molaire vanilline/éthylvanilline soit au moins égal à 2, conduite à une température comprise entre 50°C et 57°C, suivie par une opération permettant de ramener la température de la composition obtenue, à la température ambiante.
