    • The invention relates to a cooking oven (1), especially to a domestic cooking oven, with a cavity (2) for placing a dish to be cooked, with a first opening (3) in the wall (4) of the cavity (2) at a first location, wherein the first opening (3) can be opened and closed by means of a first valve (5), wherein a first conduit (6) is arranged adjacent to the first opening (3) leading to a fan element (7), and with a second opening (8) in the wall (4) of the cavity (2) at a second location, wherein the second opening (8) is in fluidic connection with a fresh air opening (9) which can be opened and closed by means of a second valve (10), wherein the fresh air opening (9) is in fluidic connection with the ambient of the cooking oven (1). To improve a steam cooking process the invention is characterized in that the second opening (8) is in fluidic connection with a bypass chamber (11) which in turn is in fluidic connection with the fan element (7) by means of a bypass conduit (12), wherein a temperature sensor (13) is arranged in the bypass chamber (11) for sensing the temperature of the medium in the bypass chamber (11) and wherein the fan element (7) is in fluidic connection with the first conduit (6) and the bypass conduit (12) via one sucking opening (14). Furthermore, the invention relates to a method for operating a cooking oven.

    • A food warming cabinet (10) includes inner and outer spaced wall members (14,34), and a door (20) forming an internal compartment (12). A heated cable arrangement (30) is interposed between the outer and inner wall members and provides a source of heat to keep the food warm. Heat insulation (32) is disposed between the inner (14) and outer (34) wall members to support the heating cable arrangement and maintain the heat developed by the heating cable arrangement in the internal compartment. A solenoid valve (44) and a spray nozzle (42) project through the wall members for selectively delivering a spray film of water from an outside source to a drip pan (50). A controller (38) is associated with the internal compartment (12) for activating the solenoid valve (44) for a predetermined time in response to opening of the door (20), whereby evaporation of moisture from the heated food lost in the opening of the door is replenished by evaporation of the water film deposited in the drip pan.

    • Steam treatment of foodstuff (L) in a baking or similar oven (11, 21 or 31) is carried out by apparatus which provides circulation of steam along a pathway arrangement (100) in communication with the oven cavity or chamber (14, 23 or 30) for steam circulation therethrough and resulting steamy atmospheric conditions therein. For example and by the gelatinisation of starch a good quality gloss and crust structure on bread (L) and biscuit products can be obtained by the steam treatment in an improved and efficient manner. Generated steam can be introduced into the pathway arrangement (100) and/or preheated and/or pressurised water can be injected (6 or 39) into the pathway arrangement (100) to provide resulting steam for circulation therein by a fan (7 or 40). Efficient operation of a heat exchanger (4 or 37) for water heating is effected or assisted by hot flue gases and any steam from the oven (11, 21 or 31). Control means (15) is provided for maintaining required operation of the apparatus such as variable water injection (6 or 39) and for sensing and controlling temperature (8), humidity (dew point) (9) and pressure (13) in the pathway arrangement (100) and/or oven cavity or chamber (14, 23 or 30). The pathway arrangement (100) and apparatus generally can be externally connected in use in communication with the oven cavity or at least partly incorporated in the oven structure.
