    • A method for manufacturing protein hydrolysate in which content of glutamic acid is high is provided to prevent deactivation of glutaminase offset by weak acidity pH and to increase content of the glutamic acid in the protein hydrolysate. A method for manufacturing protein hydrolysate in which content of glutamic acid is high includes steps of: adding protease to wheat gluten, reacting it with enzyme, sterilizing outcome and obtaining availability dispersed solution of the wheat gluten; cultivating aspergillus selected from a group consisting of Aspergillus oryzae and Aspergillus sojae at pH 7.5~8.5 and obtaining culture material including the aspergillus of the pH 7.5~8.5; and adding the culture material to the availability dispersed solution and reacting it with enzyme in pH 5.0~7.0.
