    • PROBLEM TO BE SOLVED: To obtain the subject water-soluble improving agent containing the ester of a monoglyceride or diglyceride with a polycarboxylic acid, imparting meats with softness in the qualities, rich in gravy, good in flavor, and reduced in stringy properties and capable of being easily used. SOLUTION: This aqueous improving agent for meats contains the ester of a monoglyceride and diglyceride with a polycarboxylic acid preferably in an amount of 5-60wt.% based on the whole composition. The ester is preferably the ester of a cinnamic acid or diacetyl tartarate with the monoglyceride of a 12-22C (un)saturated fatty acid such as lauric acid. A protease originated from koji mold, a surfactant having an HLB of >=13 as a water-dispersing agent, and water are preferably compounded. The surfactant having an HLB of >=13 is preferably a sucrose fatty acid ester, etc. It is effective and preferable that a meat is treated with the improving agent by a direct coating method, an immersion method, etc., and subsequently allowed to stand for a constant time and/or subjected to a tumbling treatment.
