摘要： PROBLEM TO BE SOLVED: To obtain a new β-primeverosidase gene encoding β-primeverosidase protein having a specific amino acid sequence and useful for producing an enzyme catalyzing a reaction forming a flavor component of tea and primeverose by acting upon β-primeveroside, etc. SOLUTION: This gene codes for β-primeverosidase protein including an amino acid sequence shown by the formula or an amino acid sequence in which one or plural amino acids are deleted, substituted, inserted or added in the amino acid sequence, and is useful for producing β-primeverosidase catalyzing a reaction forming a flavor component of tea and primeverose by acting upon β-primeveroside comprising a glycoside consisting of two saccharides which is an alcohol-based flavor precursor such as geraniol or linalool being a flavor component of a plant. The gene is obtained by obtaining a part of DNA of β-primeverosidase from a tea cDNA library by PCR and hybridization using the DNA as a probe.

The compound is obtained by initially concentrating and dialyzing a purified α-glucosidase, then carrying out the alkali decomposition with NaOH in the presence of NaBH4 , thereby excising an O-glycoside type saccharide chain, simultaneously reducing an aldehyde group at the reducing terminal monosaccharide, subsequently treating the resultant reactional solution by the gel filtration, reversed phase high-performance liquid chromatography (HPLC) or the like and isolating and purifying the O-glycoside type surgaralcohol.

A xylose residue or a xylooligosaccharide residue is converted into the polyhydric phenol to give the objective xylosyl or xylobiosyl polyhydric phenol useful for a food, a medicine, a reagent, an industrial chemical compound and an intermediate for an organic compound in high yield.
