    • PROBLEM TO BE SOLVED: To provide a method for producing frozen soft vegetable food suitable as food for the elderly, free from damage on its shape even in its distribution process, getting homogeneously soft even in its inside, and retaining its shape. SOLUTION: The method for producing frozen soft vegetable food includes: a process (1) for freezing vegetable food, and thawing the frozen food to prepare thawed food; a process (2) for soaking the thawed food in a dispersion solution of a pectin splitting enzyme or cellulose splitting enzyme under reduced pressure; a process (3) for separating the enzyme-treated vegetable food from the dispersion solution; a process (4) for subjecting the separated enzyme-treated vegetable food to low-temperature heating treatment at 0-10°C for 8-24 hours to prepare low-temperature treated vegetable-material food; a process (5) for heating the low-temperature-treated vegetable food at a temperature and for time each enough to stop activity of the pectin splitting enzyme or the cellulose splitting enzyme; and a process (6) for freezing the heated vegetable food. The thawing treatment in the process (1) may be carried out simultaneously to an enzyme-impregnating treatment under the reduced pressure in a successive process. COPYRIGHT: (C)2010,JPO&INPIT
