摘要： According to the process of the present invention for preparing a pasty proteinous material or a proteinous food, crustaceans are boiled and milled under sufficient conditions for inactivating enzymes contained therein and then proteolytic enzyme(s) and/or microorganism(s) are allowed to act thereon. Thus various protein sources including crustacean meat remaining in the trunks and carapaces, which have been disposed hitherto, can be efficiently utilized.

The method comprises preparing krill, adding protease to the kirll and performing enzyme reaction, extracting eicosapentaenoic acid, docosahexaenoic acid, phospholipids, and astaxanthin from the krill after performing the enzyme reaction, and mixing the extracted eicosapentaenoic acid, docosahexaenoic acid, phospholipids, and astaxanthin. The protease may comprise one or more chosen from serine alkaline proteases and metallo neutral proteases. The serine alkaline proteases may comprise proteases separated from Bacillus licheniformis and the metallo neutral proteases may comprise proteases separated from Bacillus subtillis and Bacillus amyloliquefaciens.

摘要： The invention relates to methods for providing compounds having an antihypertensive effect. More in particular, the invention relates to ACE (angiotensin I- converting enzyme)-inhibitory peptides that can be released enzymatically from whey proteins. Provided is a method for providing a protein hydrolysate having ACE-inhibitory activity, comprising treating a whey protein- containing substrate with a bacterial heat-labile neutral protease to produce a primary hydrolysate and treating said primary hydrolysate with a thermolysin to produce a secondary hydrolysate. Also provided are hydrolysates and isolated peptides obtainable by said method and uses thereof for the preparation of a medicament for inhibiting ACE activity in a mammal; for lowering the blood pressure; and/or for preventing the occurrence of hypertension.
