    • Apparatus for recovering meat from the head (10) of a slaughtered animal is disclosed. A jaw support (15) clamps and supports the head by clamping the jaw (12). Cheek pullers (20) having clamps (21) engage with and hold the cheeks (13) of the animal head (10) in the vicinity of the mouth. A drive arrangement (30) has a lateral drive (31) for moving the cheek pullers (21) outwardly away from each other and has a posterior drive (33) for moving the cheek pullers (21) in the posterior direction (A) so as to pull tissues from both the jaw (12) and the skull (11). A jaw separation means (40) comprises a snout ring (42) to be fitted to the snout of the skull (11) and a drive (33) moves the snout ring (42) so as to move the skull (11) relative to the jaw (12) with an at least partially arcuate path of movement so as to continue to open the mouth wider as or after the cheek meat (13) is removed from the animal head (10).

    • A process and apparatus for removing a hide (20) from an animal carcass (10). The animal carcass is initially opened to provide an edge (21) of the hide and the edge is pulled in a direction (PP) tranverse to the longitudinal direction (LL) so as to separate the hide progressively from the carcass until a strip of hide (25) remains attached along the spine. The strip of hide (25) is then cleared by moving a clearing means (40) along between the carcass and the strip of hide. During both hide pulling and clearing, the carcass (10) is supported in the supine position with the anterior end (16) of the carcass lower than the posterior end (15). During pulling, the line of dislocation (16) of the hide from the carcass is maintained substantially parallel to the longitudinal direction (LL). The direction (PP) of application of the pulling force is maintained so that the hide (20) is essentially peeling back upon itself away from the subcutaneous tissues of the carcass. Tension is applied to the hide in the longitudinal direction (LL) after the step of hide pulling and before commencement of the longitudinal clearing step. The hide (20) is pulled from the head (14) at the end of the step of clearing the strip of hide (25).

    • An oesophagus seal for sealing the oesophagus in a slaughtered animal comprises a plug (10) for insertion into the oesophagus (40) and a retainer in the form of a clamp (20) which internally engages and clamps to tissues of the oesophagus (40) to resist disengagement of the plug. The plug (10) has an outer peripheral clamp surface (13) and the clamp (20) is in the form of a clamp ring (21) which clamps the internal mucosa (41) of the oesophagus (40) between the clamp ring (21) and the outside clamp surface (13). The plug (10) has a reduced diameter neck (15) and a conical ramped outer surface (16) leading to the clamp surface. The clamp ring (21) is initially located beyond the neck (15) and is advanceable so that tissues (41) surrounding and projecting into the neck portion (15), e.g. by application of a vacuum, will be pinched between the advancing clamp ring (21) and the surface (16) and, upon further advance of the clamp ring (21), the tissues (41) are pinched between the clamp ring (21) and the outer clamp surface (13). There is also provided an oesophagus sealing system comprising an applicator rod (30) having an end for mounting of the oesophagus seal, and having an associated actuator (35) which is selectively moveable axially to move the clamp (20) so as to engage and clamp the tissues (41) of the oesophagus (40) between the clamp (20) and the plug (10).

    • A process of eviscerating an inverted animal carcass (10) inclined at 35 DEG to 40 DEG includes pushing the viscera (30) comprising both the thoracic viscera (31) and abdominal viscera (32) in a direction (B) from the cranial end (11) of the carcass (10) towards the caudal end (12) so as to pass between the hind legs (13) and fall from the carcass. Connecting tissues including the aorta (35) and external iliac arteries (36) are partially severed prior to pushing the viscera from the carcass so that the viscera detaches completely from the carcass after being pushed between the hind legs (13). The diaphragm (25) may be pierced at its periphery so that the force of the pushing operation causes the diaphragm to tear around its peripheral edges from the walls of the thoracic cavity. The pubic symphysis (60) is split before the pushing operation whereby the viscera (30) can pass both above and below and through the split in the pubic symphysis (60). Alternatively, the pubic symphysis (60) need not be split prior to the pushing operation whereby the viscera (30) travels over the pubic symphysis (60). A pushing member (41) commences to push on the thoracic viscera (31) at about the fifth rib and travels at 0.5 to 0.6 metres per second.
