    • The invention relates to a food processing assembly comprising a food processing apparatus, and a number of carriers for food products. Said food processing apparatus comprising a number of storeys situated above one another. Each storey is provided with an entrance for carriers at a first side of the food processing apparatus, an exit for carriers at a second side of said food processing apparatus situated opposite the first side, and a guidance device for guiding the carriers from the entrance to the exit. Each one of the storeys is provided with upper heat exchange elements and lower heat exchange elements in between which the carriers with food products can pass. The heat exchange elements are provided with through openings. In between neighbouring storeys a flow path is arranged to facilitate a substantial vertical flow of air. The food processing apparatus comprises an air supply device for in a substantially vertical direction supplying air to the upper or lower storey. Each carrier comprises a rectangular frame comprising a leading end and a trailing end, and a support member attached to the frame for supporting the food products. The leading and/or trailing end of the frame is provided with a vertical air guiding plate.
