    • The disclosure relates to an apparatus for controlling the holding time in a holding tube in infusion heating. The infuser is of the type which consists of a pressure vessel (1) with a conical bottom region (2). The pressure vessel (1) has an inlet (3) for product in its upper region and an outlet (8) with an outlet valve (9) in the lower region. The pressure vessel (1) also has an inlet (5) for steam. In the conical bottom region (2) of the pressure vessel (1) there is disposed a conical body (6) which, to the greater part, fills the conical bottom region (2). The remaining space (7) between the bottom region (2) and the conical body (6) constitutes a holding tube. The outlet of the pressure vessel (1) is in communication with a vertical tube (11). In the vertical tube (11) there is disposed a level indicator (14) which controls the level in the holding tube in that the level indicator (14) controls the outlet valve (9). The present invention also relates to a method for controlling the holding time so that this will be the same regardless of changes in density in the product.

    • The present invention relates to an adjustable steam injector (1) of the type which has an injector housing (2) with an inlet (3) for product which is to be heated and an outlet (4) for the heated product. The injector housing (2) also has an inlet (5) for steam. The injector (1) also includes an injector body (6) displaceable in the injector housing (2) and having, in its one end, a centre pin (8). Around the centre pin (8) there are disposed concentric gaps (9, 10) for product and steam, respectively. The centre pin (8) is formed so that it has a number of grooves (12) accommodated on its circumferential surface. The grooves (12) are turned towards the one end of the centre pin (8).

    • The disclosure relates to a method of cleaning a food plant of the type which produces an aseptic producr or a product with extended shelf life. The method comprises at least one and preferably two circualtions with an alkaline detergent solution (2, 12) and at least one and preferably two circulations with an acidic cleaning solutions (4, 14). The circulations take place alternatively with the alkaline detergent soluton (2, 12) and the acidic cleaning solution (4, 14). Prior to the first circulation (2), between each circualtion (2, 4, 12, 14) and after the last circualtion (14), rinsings with water take place (1, 3, 5, 13, 15). Simultaneously with the last circulation with alkaline detergent solution (12), the plant is sterilised and after the last circulation with the acidic cleaning solution (14), and the two last rinsings with water (13, 15) take place with sterile liquid.
