    • A cooking appliance includes a recirculating airflow which is directed through particularly configured air plenum and nozzle structure that synergistically combine to enhance an overall cooking efficiency and effectiveness. In particular, the configuration of the air plenum, as well as the sizing and distribution of oven cavity entry nozzles, provides for an enhanced flow of heated air to the food product, thereby resulting in short cooking times due to high heat transfer while also providing an even browning and crisping of the food item being cooked. In addition, the cooking appliance incorporates an exhaust system wherein cooling air and a percentage of the recirculating airflow are mixed prior to being exhausted from an angled exhaust mixing tube.

    • Hood, in particular associable to a cooking oven for professional kitchen applications, comprising a catalytic converter, a fan adapted to extract gases, fumes and vapors from the cooking cavity of said oven, a first intake aperture adapted to enable said gases to flow from the interior of the cooking cavity of said oven into said extractor hood, a third aperture adapted to enable said gases to be exhausted from the interior of said extractor hood into the outside ambient, a channel connecting said intake aperture with said exhaust aperture, and within which there are arranged said catalytic converter and said fan, as well as a condenser for condensing the water vapor and condensable fats contained in the gas flowing through said channel; in said channel there is provided a second intake aperture adapted to take in air from the ambient surrounding the oven. The extraction fan is arranged downstream of the catalytic converter said second intake aperture is located downstream of said catalytic converter and immediately upstream of the fan.

    • A catalytic conversion unit treats emissions emanating from a cooking event. The unit comprises a housing to contain the other components that connects either directly or through the use of ancillary components to the oven cavity of a residential range, or oven. Contained within the housing are an electric heating element and a catalyst unit. The housing may connect to additional components to complete the venting of the exhaust to the atmosphere. The electric heating element is arranged so that infrared radiation from the hot surface of the element is visible by the inlet face of the catalyst. The power output of the heater is sized so that the catalyst reaches a minimum operating temperature to initiate the catalytic reaction in advance of the temperature increase in the air coming from the cavity.
