摘要： An apparatus for reducing a temperature of products includes a housing having a chamber within, wherein the chamber has upper and lower regions; a conveyor for transporting the products through the chamber, the conveyor constructed for substantial gas flow to pass through the conveyor without substantially reducing the ability of the conveyor to transport the products; an agitator associated with the conveyor for selective, intermittent contact with the conveyor to displace the conveyor from a plane of travel, thereby displacing the products on the conveyor to substantially prevent the products from adhering to the conveyor and other of the products; a gas circulation device disposed within the chamber to generate circulating gas flow within the chamber; and a shroud disposed within the chamber for coacting with the conveyor to provide an interface between the upper and lower regions, the shroud constructed and arranged to guide the circulating gas flow from the lower region through the conveyor to the upper region, and thereby facilitating displacement of the products on the conveyor to increase exposed surface area of said products. A related method is also provided.

摘要： A through-flow freezer is disclosed comprising a freezing cylinder, an inlet pipe, an inlet blocking device, an air inlet, an outlet pipe and an outlet blocking device, wherein, at least in one operational mode of the through-flow freezer, the inlet blocking device and the outlet blocking device are closed such that a certain amount of mix and a certain amount of air substantially corresponding to a desired overrun in the freezing cylinder can be entrapped in the freezing cylinder by introducing air via the air inlet. Furthermore, a method for starting up a through-flow freezer is disclosed comprising the step of adding air through the air inlet until a certain amount of mix and a certain amount of air substantially corresponding to a desired overrun is entrapped in the freezing cylinder and a certain cylinder pressure is reached in the freezing cylinder before starting the cooling of the freezing cylinder.

The method includes steps of feeding vegetable oil miscella to a conditioned polymeric microfiltration membrane, and recovering a permeate stream having a decreased weight percent of phospholipids compared with the weight percent of phospholipids provided in the miscella. The retentate stream can be further processed for the recovery of lecithin. The polymeric microfiltration membrane can be conditioned for the selective separation of phospholipids in the miscella. A method for conditioning a membrane for selective separation of phospholipids from vegetable oil miscella, and the resulting membrane, are provided. The membrane which can be conditioned can be characterized as having an average pore size of between about 0.1μ and about 2μ.

摘要： A cryogenic processor is provided for liquid feed preparation of a free-flowing frozen product comprising. In accordance with one aspect of the invention, the cryogenic processor includes a freezing chamber having a substantially conical shape, at least one feed tray overlying the freezing chamber arranged and adapted to receive liquid composition from a delivery source, the tray having a plurality of orifices for the discharge of uniformly sized droplets of the composition from the feed tray, whereby the droplets are delivered by gravity into the freezing chamber there-below. The cryogenic processor also includes at least one sensor associated with the feed tray for determining a depth of liquid composition in the feed tray, at least one valve associated with a liquid composition delivery line, the valve being configured to control the rate at which liquid composition is delivered from the delivery source to the feed tray, and a controller responsive to the at least one sensor for controlling a position of the valve, and therefore the rate at which liquid composition is delivered from the delivery source to the feed tray.

摘要： Mixing and dispensing apparatus for a frozen confection machine for mixing and dispensing a measured volume of frozen confection material and a flavoring material including edible solids. The apparatus comprises a mixing and measuring chamber including a mixing cylinder having a discharge head at one end, a rotary mixer in the cylinder and a dispensing piston slidable in the cylinder. The mixing and measuring chamber has a flavoring material inlet port, a flavoring material feed chamber communicating with the flavoring material inlet port, and a flavoring material feed piston for feeding flavoring material from the feed chamber to the mixing cylinder. The mixing and measuring chamber also has confection material inlet port adapted for connection to a frozen confection machine and a confection inlet valve for controlling flow of confection to the mixing cylinder. The discharge head has a discharge passage and a discharge valve for controlling flow through the discharge passage. Operating mechanism is provided for moving the dispensing piston in the mixing cylinder to a position contiguous to the discharge head to discharge substantially all of the material from the chamber. Heat transfer apparatus is provided for cooling the mixing cylinder from the frozen confection machine.

摘要： An apparatus for producing ice-cream from a flowable formulation consists of a storage container for the formulation and a cooling and freezing cylinder disposed beneath this and connected to the container by a feed pipe. An air line discharges into this cylinder, feeding compressed air which is to be whipped into the formulation. In order to prevent foaming in the storage container, a retaining means is associated with the feed pipe which largely seals the feed pipe when pressure obtains in the cylinder and in the storage container, substantially opening the feed pipe when the pressure therein fails.
