    • An indicating type timing device for use in fast food preparation is provided to time cooking processes in which a food product is cooked by immersing it in a heated cooking medium. Since various food products, such as french fries, fried onion rings, fried fish, and the like require different cooking times, the unit is adapted to properly time the cooking of these different products, irrespective of the initial temperature of the food product or the cooking time.The timing device uses a voltage controlled oscillator and associated counting circuit. The base frequency of the oscillator is set by the charge on the capacitor in one of a selected series of RC timing circuits. A thermistor continually measures the temperature of the cooking medium (such as shortening) and produces a voltage that varies the base frequency of the oscillator (increasing the frequency for increased measured temperatures). When the counting circuit has received a pre-determined number of pulses, it actuates a warning system advising the operator that the cooking is complete.The frequency of oscillation varies as a logarithmic function of the thermistor voltage. Similarly, required cooking time is a logarithmic function of cooking temperature. Consequently, operations on the proper portion of the respective curves assures uniformity of cooking times.A series of gang switches allow the operator to adjust the length of cooking time for the food product being cooked by using different resistors in the RC circuit.The unit may also operate in parallel for multiple cooking units, utilizing the same warning signal system.Comparative output voltages from the thermistor are also used to actuate lights advising the operator when the shortening has reached the desired temperature so that cooking may commence, and also to actuate an overheat warning circuit.

    • A probe mounting apparatus adapted for use in the deep fat frying of French fries, fish, chicken and the like, wherein the length of cooking time is to be calculated by a timing computer responsive to the temperature of a predetermined portion of the cooking medium as sensed by a probe assembly including a stiff sleeve formed of a smooth surfaced metal and containing a temperature sensing element at its end. The probe assembly is repeatably and accurately attached to the fryer and immersed with its sensory element in a precise location in the cooking medium by means of a mounting apparatus comprising: a mounting block fixedly attached in a predetermined location on the fryer and having an opening therein, such as a slot, arranged to receive the probe sleeve and to define the position of the probe's longitudinal axis in the cooking medium. The block contains gripping means, such as releasable ball detents, to hold the probe sleeve in the block, and the longitudinal position of the probe sleeve in the block is fixed by means such as collars on the probe to accurately define the position of the temperature sensing element immersed in the cooking medium. The end of the sleeve is repeatably fixed in the predetermined portion of the cooking medium, thereby supplying uniform temperature data input to the computer despite repeated removal of the sleeve from the fryer for cleaning, and probe manufacturing and installation are simplified.

    • A probe safety coupling device adapted for use in a cooking system, such as in the deep fat frying of French fries, fish, chicken and the like, wherein the cooking is to be controlled by an electrical control unit responsive to the temperature of a predetermined portion of the cooking medium as sensed by a probe assembly containing a temperature-sensitive element at one end and delivering electrical signals to the control unit through a flexible conduit at the other end. The probe assembly is attached to the control unit with good electrical contact and with lessened risk of probe breakage by means of a safety coupling device which includes a first electrical connector fixedly secured to the timing computer and joined to a length of flexible conduit terminating in a second electrical connector. The second electrical connector joins the safety coupling device to the probe assembly so that their respective flexible portions have their longitudinal axes in alignment, and is arranged to be axially releasable, preferably being of the pin and socket type with the pins and sockets extending axially and releasing from one another upon the imposition of sufficient axial tension. Because of the flexibility of the probe assembly and coupling device, minimal bending stress is placed upon the electrical connection therebetween, thus maintaining reliable electrical contact. Relative movement between the control unit and probe assembly, arising for example from a failure to remember to disconnect the probe during nightly cleaning, is converted to an axial disconnecting stress automatically separating the probe assembly from the safety coupling without breakage.
