Surfaces of food-packaging materials are treated to provide a release coating thereon by applying a coating of a hydrated hydrocolloid in amount 0.5-5.0 pounds on a dry basis per ream of packaging material. (A "ream" is defined as an area of 3000 square feet). Examples of suitable release agents are corn starch, wheat flour, Guar gum, carrageenan, carboxymethyl cellulose and combinations thereof. The hydrocolloid may first be mixed with cold water to form a paste or suspension and the suspension then heated to promote hydration of the hydrocolloid. The suspension is maintained at elevated temperature under stirring conditions until the hydration is completed and a colloidal solution of gel is formed. The hydrocolloid gel is then applied to the packaging materials by, say, gravure cylinders and knife combination to apply a thin film layer of the hydrocolloid to a continuous web of packaging material. Certain readily hydrated hydrocolloid material such as pre-gelatinized starch, dextrin, and non-ionic water-soluble cellulose ethers may be applied to the surface of the packaging material in a substantially dry condition, the hydrocolloid materials being hydrated in situ by absorption of moisture from the packaged product to form a thin film. Application of these readily hydrated hydrocolloid materials may be by dusting, or in the form of a slurry in an inert organic carrier such as isopropanol or ethanol. The packaging material is suitable for wrapping processed cheese, cream cheese, margarine, caramels or toffee. The packaging material may be a cellulose nitrate/aluminium foil/wax-resin blend lamination.
