    • An apparatus for producing units fit for packing, preferably of a cheese product of the type cheese-base, is adapted to be connected to a cheese-base production system from which the cheese-base is pressed out in a continuous flow. The apparatus comprises an accumulating pipe connectable to the discharge pipe of the cheese-base production system. This accumulation pipe expands in the flow direction and ends in a cylindrical pipe section of a first greater sectional area. Subsequently, the cylindrical pipe section of the accumulating pipe is connected to a cylindrical extrusion pipe of a second smaller sectional area. At the discharge end of the extrusion pipe, a cutting device is provided for cutting desired lengths of the extrudate. This apparatus allows production of cheese-base units in a suitable size fit for further handling and transport.

    • A door-operating mechanism for a rotatable drum which has a mouth to be closed by a door includes a moveable arm hingedly mounted with anchoring means on the side of the frame of the drum, and clamp means for connection with a stub shaft extending from the door. When the door is closed on the mouth of the drum, the clamp means is disengaged from the stub shaft so that the door is secured, under vacuum pressure within the drum, as an integral part of the rotating drum. Force is thus avoided on the hinged, moveable arm, and stub shaft of the door and door-operating mechanism. The clamp means includes jaws which are activated to release the door after a predetermined vacuum pressure exists within the drum. Energization of the jaws to engage the shaft is effected after the vacuum pressure has decreased to a predetermined level, the mechanism has moved a predetermined axial distance from the door and there has also been a predetermined time delay. Adjustment means are provided for moving the relative position of the door transversely and axially relative to the rotational axis of the drum. Lugs about the periphery of the door also facilitate alignment of the door with the mouth of the drum.

    • An apparatus for the continuous matting and milling of cheese curd. The apparatus includes a housing which houses an upper, water-permeable, endless conveyor belt and a lower endless conveyor belt which operates in the opposite direction to that of the first belt. A mixture of cheese curd and whey is deposited as a layer on the upper belt and the whey is drained through the belt and is discharged through the lower end of the housing. The matted curd is transferred from the upper belt to the lower belt and as a result is inverted, and is subsequently discharged to a curd milling unit which acts to cut the mat of curd into cube-like chunks. The curd mill includes a cylindrical drum and a blade extends the length of the drum and is spaced outwardly from the drum periphery. A series of radial knives connect the blade and the drum. The drum is rotated through an arc between a cutting position wherein the blade and knives cut the curd mat into cube-like chunks and a retracted position where the chunks fall by gravity from the drum to a collection site.

    • A cheese cubing apparatus divides blocks of cheese into relatively small cubes which are then shredded for depositing on pizza crusts. A pair of parallel inclined conveyors having similarly opposed cutters secured to the upper end. Each conveyor is driven by a hydraulic motor in a timed manner to locate the cheese block and to then hesitate. A laterally extending hydraulic piston unit forces the cheese block outwardly through a stationary cutting element defined by spaced wires in the discharge path to form cubes which drop into the cheese shredders mounted therebetween. Each conveyor has a belt formed of stainless steel slats interconnected by suitable pin means and spaced plates to carry the cheese blocks. Conveyor sidewalls are releasably secured to a box-like frame and to each other to permit ready exposure of the operating components for cleaning. Each of the shredders includes a rotating support disc with an apertured basket releasably secured thereto. A plurality of circumferentially spaced cutter arms rotate oppositely within the basket and force the cheese cubes out the basket to shred the cheese. An outer encircling wall is releasably hung upon the main framework by a pin and cylinder coupling. A chute member has a lower circle base which rests on the upper end of the tubular wall and is clamped in position by a suitable latch member. An additional outer baffle is hung on the framework and encircles the lower end of the cutter to maintain complete enclosure of the shredded material as it drops.
