    • The invention relates to a translucent milk drink and a method for preparing it. The drink may be prepared by (a) providing an opaque milk starting material having a pH in the range of 5.6-8.0, preferably 5.6-7.0, most preferably 5.7-6.5; (b) contacting at least a portion of the starting material with a cation exchanger until the percentage transmission of the material (when separated from the exchanger) rises to at least 5%, preferably at least 25%, more preferably at least 40%; (c) optionally mixing the translucent milk sample with another milk sample while retaining the percentage transmission at least 5%, preferably at least 25%, more preferably at least 40%. The milk drink may be used as the base for a soft drink like milk drink, which may be carbonated.

    • This invention relates to a process for the recovery of .alpha.-lactalbumin and/or .beta.-lactoglobulin enriched whey protein concentrate from a whey protein product. The process comprises the following steps:a) incubating a solution comprising whey protein product with a calcium-binding ionic exchange resin in its acid form to initiate the instabilization of .alpha.-lactalbumin,b) adjusting the pH of the treated protein product solution to a value between 4.3 and 4.8, after separation of the resin,c) incubating the protein product solution at a temperature between 10 and 50.degree. C. to promote the flocculation of .alpha.-lactalbumin,d) fractionating the proteins in the protein product solution at pH 4.3-4.8, providing an .alpha.-lactalbumin enriched fraction and a .beta.-lactoglobulin enriched fraction,e) raising the pH of the .alpha.-lactalbumin enriched fraction sufficiently to solubilize the .alpha.-lactalbumin fraction, andf) optionally raising the pH of the .beta.-lactoglobulin enriched fraction sufficiently to neutralize the .beta.-lactoglobulin fraction.

    • A method for desalination of whey which is conducted through an anion exchanger and a cation exchanger. The whey is first conducted through a weakly basic anion exchanger in hydrogen carbonate form and then through a weakly acidic cation exchanger in ammonium form. The ion exchangers are regenerated by treatment with an ammonium hydrogen carbonate solution, whereupon the ammonium and hydrogen carbonate ions present in the whey are removed by evaporation.The invention also relates to an apparatus for carrying out the method. The apparatus comprises ion exchange columns having inlet and outlet ends. Each column is connected at its inlet end to means for supplying whey to be desalted and regeneration solution, and means for removing residual acid and alkali. Each ion exchange column has at its outlet end means for removing spent regeneration solution and supplying acid and alkali. The outlet end is further connected to evaporators for vaporization of treated whey. The apparatus further comprises a distiller for distillation of spent regeneration solution, and a tank for holding regeneration solution.
