    • A Lithospermum erythrorhizon concentrate and its preparation method are provided to simplify the production process of red soju(distilled liquor), to consistently supply a coloring matter in the production of the red soju, and to minimize the change of the coloring matter in the production of a low-alcohol red soju. A Lithospermum erythrorhizon concentrate is prepared by the steps of: (a) washing Lithospermum erythrorhizon, soaking the washed Lithospermum erythrorhizon in an aqueous citric acid solution for 20~28hr, washing the soaked Lithospermum erythrorhizon, drying the washed Lithospermum erythrorhizon for 6~10hr, and soaking the dried Lithospermum erythrorhizon in 40~95% alcohol for 11~18days to leach a coloring matter containing shikonin; and (b) concentrating the leachate obtained from the step (a) by a concentrator.

    • A food additive containing Lithospermum erythrorhizon, and its preparation method are provided to increase the shelf life of vegetable oil and enhance the appearance of food. A food additive containing Lithospermum erythrorhizon is prepared by the steps of: (a) washing/drying Lithospermum erythrorhizon; (b) soaking the dried Lithospermum erythrorhizon in an organic solvent in a weight ratio of 1:8~13 for 20~26hr to extract the ingredients of Lithospermum erythrorhizon; (c) filtering the extracted ingedients, vacuum concentrating the filtrate, and removing the solvent to obtain a Lithospermum erythrorhizon extract; and (d) mixing the Lithospermum erythrorhizon extract to vegetable oil in a ratio of 1:100000~10000000 to obtain a food additive. The step (a) further comprises soaking Lithospermum erythrorhizon in a dilute vinegar solution before drying. The organic solvent used in the step (b) is ethanol. The vegetable oil comprises at least one ingredient selected from the group consisting of coconut oil, corn oil, cottonseed oil, olive oil, palm oil, peanut oil, rapeseed oil, safflower oil, sunflower oil, soybean oil, and grape seed oil.

A method for pretreating Lithospermum erythrorhizon comprises the steps of: (a) washing dried Lithospermum erythrorhizon; (b) dipping the washed Lithospermum erythrorhizon in citric acid solution containing 0.1-0.3% of citric acid based on the weight of Lithospermum erythrorhizon for 20-24 hours; and (c) washing and drying the dipped Lithospermum erythrorhizon for 4-10 hours, and optionally cutting the dried Lithospermum erythrorhizon to 2-6 cm.

Further, an organic solvent mixed in the extract of Lithospermum erythrorhizon is selected from a group consisting of ethyl acetate or spirit.
