    • Disclosed is a manufacturing method of red ginseng vinegar, which manufactures red ginseng vinegar by saccharizing red ginseng and fermenting the red ginseng saccharized extract with acetic acid. The manufacturing method of red ginseng vinegar according to the present invention comprises a first step of preparing a red ginseng saccharide extract by saccharizing red ginseng, diluting the red ginseng saccharide extract to 20-40 brix and sterilizing at 118-123 °C for 10-20 minutes; a second step of yielding an alcohol fermented solution of the red ginseng saccharide extract by inoculating the red ginseng saccharide extract to yeast and fermenting with stirring; a third step of inoculating the alcohol fermented solution of red ginseng saccharide extract with adjusting the alcohol content to vinegar starter and cultivating with stirring; and a fourth step of centrifuging the fermented solution finished the acetic acid fermentation or removing solid, aging for a certain period and sterilizing.     • PURPOSE: A method for fractioning and purifying ginsenoside F1 from ginseng leaves and stems is provided to stably acquire an expensive ginseng extract and to enhance competitive pricing of an ingredient. CONSTITUTION: A method for fractioning and purifying ginsenoside F1 from ginseng leaves and stems comprises the steps of: collecting ginseng leaves or stems and naturally drying or freeze-drying the ginseng leaves or stems; pulverizing the dried ginseng leaves or stems to prepare an ingredient; putting the ingredient to an extraction container and adding a solvent in a weight ratio of 1:1.5-3.0; extracting the mixture in a water bath with a temperature of 40-70°C for 6-8 hours four times and defatting; collecting and removing the solvent from the ingredient in a fume hood; adding 50-90% ethanol to the ingredient in a ratio of 1:1.5-3.0 and extracting the second mixture in a water bath with a temperature of 60-80°C using a reflux condenser for 8 hours three time; concentrating the extract; adding water to a mixture of the extract and methyl trichloride (CHCl_3) or dichloromethane (CH_2Cl_2) mixed in a ratio of 1:5-10 and removing hydrophobic ingredients such as pigments, lipids, and remaining agrochemicals; separating a water layer from a methyl trichloride layer or a dichlromethane layer; adding ethyl acetate to the water layer in a weight ratio of 1:1 and collecting an ethyl acetate layer; and washing the ethyl acetate layer with water and concentrating the ethyl acetate layer.
