摘要： Provided is a method for increasing the content of free amino acid and enhancing antioxidant activity and anticancer activity in fermented soy products using deep ocean water and sea tangle powder. In a method for preparing fermented soy products using the salt obtained from deep ocean water, sea tangle powder is added as a supplementary material. The fermented soy products represent soybean paste, soy sauce or red pepper paste. The sea tangle increases the content of free amino acid and enhances the antioxidant activity and anticancer activity. In addition, the sea tangle secures an excellent taste and flavor.

Also, provided are a preparation method and ethanol extract thereof. 摘要： A food composition for preventing hyperlipidemia is provided to reduce the concentration of neutral lipid and blood cholesterol and to inhibit the HMG-CoA reductase related to the synthesis of cholesterol. A food composition for preventing hyperlipidemia comprises an extract extracted from the Oncorhynchus masou masou powder by using an ethanol aqueous solution as an extract solvent. Preferably the ethanol aqueous solution is 70% ethanol aqueous solution. The extract is carried out at 70~90°C for 18~30 hours, and the extraction is repeated 1~5 times.

Pegler powder and sea tangle powder as effective ingredients comprises: 20wt% of Lentinula edodes (Berk.) Pegler powder, 2.2wt% of sea tangle powder, and 77.8wt% of a complex-seasoning base. The complex-seasoning base comprises 53.38wt% of refined salt, 25.71wt% of vegetable base, and 20.91wt% of yeast extract powder, wherein the vegetable base comprises 35.71wt% of onion, 21.43wt% of garlic, 15.72wt% of maltodextrin, and 27.14wt% of refined water. The powder is obtained by performing extraction with a solvent selected from the group consisting of ethanol, butanol, hexane, chloroform, ethylacetate and water, and then volatilizing the solvent to make powder.
