    • 본 발명은 특수미를 이용한 다이어트식 죽의 제조방법에 관한 것이다.
      본 발명의 특수미를 이용한 다이어트식 죽의 제조방법은, 특수미로써 고아미 100 중량부를 준비하고, 고아미 100 중량부에 대하여 자색 고구마 분말 200 ~ 280 중량부, 다시마 분말 3 ~ 5 중량부, 보리 분말 10 ~ 20 중량부, 소금 3 ~ 7 중량부를 준비, 혼합하여 혼합물을 제조하는 재료혼합단계와; 고아미 100 중량부 대비 1,000 ~ 1,200 중량부의 물을 상기 혼합물에 첨가한 후 교반하는 교반단계와; 교반된 재료에 열을 가해 익히는 가열단계와; 가열된 재료를 -20 ~ -48 ℃의 온도에서 36 ~ 60 시간 동안 동결건조하는 동결건조단계와; 동결 건조된 재료를 진공 포장하는 포장단계;를 포함하여 구성된다.
      본 발명에 의해, 주재료로 아밀로스 함량이 높은 고아미를 사용하여 죽을 제조함으로써 칼로리를 낮춰 다이어트식으로 적합하며, 부재료로써 변비 예방에 효과가 있는 자색 고구마 분말, 보리 분말, 다시마 분말을 첨가하여 변비를 예방할 수 있고, 자색 고구마 분말, 보리 분말, 다시마 분말을 첨가량을 최적의 비율로 조합하여 상기와 같이 변비 예방 효과를 가지면서 맛과 기호도가 향상되며, 일반 고구마가 아닌 자색 고구마 분말을 사용함으로 인해 죽의 색상이 취식자가 선호할 수 있는 색상이 되어 결과적으로, 다이어트 및 변비 예방에 효과를 갖게 하면서 맛과 색상을 우수하게 하여 기호도가 향상된다.
