    • PROBLEM TO BE SOLVED: To provide an organic oxygen absorber which does not influence a metal detector and the like, has excellent oxygen absorbability, does not cause a shrinkage phenomenon in packaging materials, eliminates the need of equipment that replaces with nitrogen to provide oxygen-free conditions, has high flowability so as to be mechanically easily filled in packaging materials such as small bags and to be excellent in production efficiency, and uses a porous carrier; and to provide a preparation method thereof.SOLUTION: An organic oxygen absorber includes: an oxygen-absorbing material formulation prepared by allowing 100 wt.% of porous silica and 100-200 wt.% of an ascorbic acid-based compound to react with each other at room temperature so as to impregnate the ascorbic acid-based compound into the silica; and a catalyst material formulation prepared by allowing 100 wt.% of porous silica and 100-200 wt.% of an iron salt compound to react with each other at room temperature so as to impregnate the iron salt compound into the silica, wherein the oxygen-absorbing material formulation and the catalyst material formulation are mixed with each other at a predetermined ratio.
