    • PURPOSE: To produce a low lactose powdered milk product useful for alimenting a lactose-intolerant patient since it contains no lactose and free from the browning attributable to lactose by carrying out alcohol fermentation on the lactose in a raw-material milk followed by spray-drying. CONSTITUTION: After carrying out alcohol fermentation on the lactose in a raw-material milk (e.g. skim milk), the alcohol is made to evaporate by spray drying and the objective product is obtained. Simultaneous addition of yeast and a lactose-decomposing enzyme to the raw-material milk or the addition of yeast to the milk treated with the lactose-decomposing enzyme allows alcohol fermentation with the yeast on the glucose and galactose which are formed by the decomposition of lactic acid. This process, preferably carrying out alcohol fermentation on lactic acid, prevents the generation of foul smell and attains excellent fermentation efficiency. As the yeast, Saccharomyces cereviciae SBT5211 strain (FERM-P-14819) is preferable. Further, as the lactose- decomposing enzyme, the one free from protein decomposing activity is preferred.
