摘要： PROBLEM TO BE SOLVED: To provide an inexpensive method for purifying cellobiose from cellobiose-containing sugar liquid without using complex processes, improving its purity and recovering rate as leaps and bounds; and a method for producing the cellobiose having a high solubility with water. SOLUTION: This method for purifying the cellobiose is characterized by comprising (A) a process of preparing the cellobiose-containing sugar liquid, (B) a process of making ≥50% ratio of cellobiose based on the total sugar materials in the cellobiose-containing sugar liquid, and (C) a process of crystallizing the cellobiose; and the method for producing the cellobiose having a high α-anomer ratio is characterized by drying the cellobiose-containing sugar liquid having ≥90 mass% cellobiose ratio based on the total sugar materials, while holding at 80-95°C.
