摘要： PURPOSE:To obtain pickles in soy sauce preservable for a long time without degrading the flavor of the products, by adding a juice or extract from plants of dogtooth violet to the materials in the preparation step of the pickles. CONSTITUTION:Plant bodies, e.g. leaves, subterranean stems, or fruits of dogtooth biolet (Erythonium japonicum) are suitably crushed, and squeezed by a press or extractor to give a juice, which is extracted with an organic solvent, e.g. methyl or ethyl alcohol, or propylene glycol, to form an extract. The juice, extract, or a concentrated extract (J) is added to materials in the preparation step of pickles in soy sauce, e.g. sliced vegetables pickled in soy sauce, wariboshi zuke, Korean pickles, or ajidako zuke (octopus pickles). The amount of J is 0.002-6% (w/v), preferably 0.02-0.6% (w/v), based on the dry weight of the plants bodies. The use of vinegar solution further reduces the amount and provides a better preservation effect.

Inutade (Polygonum longisetum DE BRUYN), Akaza (Chenopodium album L. var. centrorubrum MAKINO), Shiroza (Chenopodium album L.), etc. may be cited as the wild plants. Examples of the nonsterile packed food include pickling in soy sauce or vinegar, or fresh radish preserved with salt and malt.

摘要： PURPOSE:To provide the title agent having low-toxicity and high safety, applicable to crops in harvest season as well as nursery season and growing season, and especially effective to powdery mildew and downy mildew of various vegetables, containing an aqueous solution of acetic acid having a specific concentration. CONSTITUTION:An aqueous solution containing 0.005-0.25%, pref. 0.01-0.20% of acetic acid, such as vinegar, a vinegar solution obtained by adding 0.3-0.9 part by weight of egg shell, sodium bicarbonate, and/or sodium hydroxide to vinegar containing 1 part by weight of acetic acid, synthetic acetic acid, or aqueous solution obtained by diluting the above with water. The solution may contain a spreading agent such as nonionic surface active agent. It is especially effective to powdery mildew and downy mildew of cucumber, melon, eggplant, strawberry, etc. It is scattered to the crops at intervals of 2-10 days. The amount of other pesticides which is to be applied in the growing season can be reduced by scattering the agent of this invention in the harvest season.

摘要： PURPOSE:During making fermented pickles, the squeezed juice or extract of dogtooth violet by organic solvent is added to the pickle solution to prevent the production of harmful film-forming yeast and accelerate the lactic acid fermentation, thus making said fermented pickles with high storability. CONSTITUTION:During making fermented pickles, the squeezed juice or extract of dogtooth violet by organic solvent is added in an amount of 0.002-6, preferably 0.02-0.6wt%, calculated as dried dogtooth plant based on the total pickls solution. As the bodies of dogtooth violet plant, any of leaves, subterranean stems, fruits may be employed; however, the use of leaves is preferred from the view point of amount. The extract is prepared by adding water and/or organic solvent to dried dogtooth violet plant at a weight ratio of 5-20:1 and heating at 20-100 deg.C for 10min-5hr.

The amount of the leaves, etc. to be added is 0.002-6%, pref. 0.2-0.6% as dried weight, and 0.01-30%, pref. 0.1-3% as raw leaves. The use of leaves is preferable in view of the availability.

摘要： PURPOSE:To improve the preservability of soy pickles without degrading the taste and flavor of the product, by adding the tissue of a plant belonging to Hosta genus to soy pickles during the prepatation. CONSTITUTION:Raw or dried tissue of a plant belonging to Hosta genus (an edible wild plant) is added to soy pickles during or after the preparation. The amount of the additive is 0.001-3 W/W % as dried weight or 0.005-15 W/W % as raw weight of the tissue. Addition of vinegar to the product in an amount not to change the taste and flavor of the product, improves the anti-molding and anti-bubbling effects of the plant.
