    • PROBLEM TO BE SOLVED: To provide a method for producing granular miso comprising extruding miso into vacuum space where the degree of vacuum is kept under some hundreds of Pa in a corded state using an extruding granulator so as to subject the miso to vacuum dry so that homogenization/uniformity for adjusting unevenness of contained moisture caused in the semi-dried miso is satisfactorily performed when semi-drying the raw material miso to have such a low moisture content ratio as to be applicable to plastic forming without causing deterioration in its quality. SOLUTION: The method comprises the following processes: a first process of semi-drying the raw material miso using a freeze vacuum dryer so as to have a plastic-limit low moisture content ratio; a second process of putting the semi-dried miso into a heating cabinet while warming/storing the miso at 15-20°C for some days to homogenize the contained moisture; and a third process of extruding the semi-dried miso with homogenized contained moisture into an extrusion chamber kept so as to have a predetermined vacuum degree using the extruding granulator, and cutting/crushing the miso with a high-velocity revolution knife cutter set in the extrusion chamber to granulate the miso.     • PROBLEM TO BE SOLVED: To provide a method for producing granular fermented bean paste (miso) through drying raw miso into a granular form. SOLUTION: This method comprises as follows: stock miso as a mixture of raw miso with a seasoning and other ingredients is subjected to a freeze-vacuum dryer and preliminarily dried into semi-dried miso 15-30 wt.% or so in water content; the semi-dried miso is then disaggregated, mixed and refrigerated using an agitator to effect its water content homogenization/uniformization; the refrigerated semi-dried miso is then fed to an extrusion granulator 5 and extruded via an extrusion hole into a vacuum chamber with a vacuum degree of several Torr or lower to effect molding into a stringy form; the resulting molded product is crushed in situ by a knife cutter 61 being in high-speed rotation, and the crushed product is immediately fed into the drum 70 of a vacuum dryer 7 communicating with the vacuum chamber; in the vacuum dryer, the crushed product is subjected to primary drying for a specified time, and following ending the operation, the product is withdrawn from the vacuum dryer 7 once and then finely crushed under normal pressures by the knife cutter 61 being in high-speed rotation to adjust granular size followed by feeding the resultant finely crushed product into the vacuum dryer 7 again to carry out a secondary drying for a specified time.
