摘要： PROBLEM TO BE SOLVED: To efficiently obtain the subject compound having an inhibitory action on blood coagulation, antihyperlipemic action, etc., useful for a food, a medicine, a cosmetic, a feed, etc., by culturing a filamentous fungus in a medium comprising an oil and fat mixture containing highly unsaturated fatty acids. SOLUTION: In this method for producing a glyceride containing a highly unsaturated fatty acid, a filamentous fungus [e.g. Mucor hiemalis HA-30 (FERM P-16858) or the like] is cultured in a medium comprising an oil and fat mixture containing at least one or more of highly unsaturated fatty acids such as α- linolenic acid, γ-linolenic acid, octadecatetraenoic acid, dihomo-γ-linolenic acid, arachidonic acid, eicosapentaenoic acid, docosapentaenoic acid, docosahexaenoic acid, etc., and one or more of the highly constituting fatty acids are accumulated in a high purity in the filamentous fungus to give the objective glyceride containing a highly unsaturated fatty acid at a low cost and efficiently.

SOLUTION: This method for purifying a lower alcohol ester of a highly purified and highly unsaturated fatty acid purifies a lower alcohol ester of a highly purified and highly unsaturated fatty acid from a lower alcohol ester mixture of an unsaturated fatty acid. The purification method comprises a process of preliminarily extracting the lower alcohol ester component of the highly unsaturated fatty acid by molecular distillation of the lower alcohol ester mixture of the unsaturated fatty acid, a process of extracting the lower alcohol ester concentrated component of the highly unsaturated fatty acid by vacuum distillation of the lower alcohol ester component of the extracted highly unsaturated fatty acid, and a process of differentially purifying the lower alcohol ester of the highly purified and highly unsaturated fatty acid by subjecting the lower alcohol ester of the extracted highly unsaturated fatty acid to a high-performance liquid chromatography by using a filler of a reverse phase partition system.

The hydrolyzing reaction is preferably carried out in a nitrogen gas atmosphere to prevent deterioration of the fatty acid.
