      SOLUTION: The method for producing lactic acid includes a step for culturing microorganisms having the lactic acid-producing ability in the medium containing a nitrogen source and a carbon source, and a step for collecting the produced lactic acid. The method is regulated so that only a fish-originated nitrogen source may be added as the nitrogen source to the medium at the start of the culture, and a nitrogen source except the nitrogen source may be added at the time point at which the rate for producing the lactic acid is reduced or substantially stopped.

      SOLUTION: This optically active 2,3-dichloro-2-methyl-1-propanol is produced by a first process of effecting at least 1 kind of a microorganism having a capacity of effecting an enantiomeric mixture of 2,3-dichloro-2-methyl-1-propanol to leave the R- or S-form of the 2,3-dichloro-2-methyl-1-propanol, or its treated material on the enantiomeric mixture of the 2,3-dichloro-2-methyl-1-propanol, and a second process of separately obtaining the remaining optically active 2,3-dichloro-2-methyl-1-propanol. The optically active 2-methylepichlorohydrin is produced by performing the ring closure of the optically active 2,3-dichloro-2-methyl-1-propanol.

      SOLUTION: The method for producing a purified β-D-glucan comprises a first process for adjusting a microorganism culture solution containing a β-D-glucan or a ground microorganism solution, a second process for removing a microorganism or an insoluble admixture to give a supernatant and a third process for ultrafiltering the supernatant in alkalinity so as to remove the whole or a part of a low-molecular admixture from the β-D-glucan. The purified β-D-glucan having light transmittance of ≥60% at 660 nm in 0.2 wt.% of an aqueous solution at 25°C is obtained by the method.
