    • PROBLEM TO BE SOLVED: To provide a short-time cooking method capable of changing vertical positions of heating units according to height of a food material, capable of utilizing a wavelength of heat having penetration force into the food material, to say nothing of utilizing a heating procedure by heat transmission from surfaces of the material to its central part, capable of preventing generated heat from being released, capable of utilizing microwaves and high-temperature heating due to radiant heat and conductive heat, and therefore capable of simultaneously heating the food material from the outside and the inside, and to provide a cooker.
      SOLUTION: In this heating cooker, a vertical transfer unit is attached to upper and lower units for generating the radiant heat and the conductive heat, so that upper and lower graphite plates are optionally transferred to positions at which distances to the food material from the plates themselves are equal to each other and are short. Further, side covers 41 for a cooking space formed by the upper and lower graphite plates are hung from the upper graphite plate in the direction of the lower graphite plate, because side faces of the cooking space are opened in a housing of an oven case, and therefore, a separated space is formed for the purpose of preventing the heat from being released. Thus, the heating cooker of composite double-sided type is positioned in the oven case, so that the short-time cooking for giving tastiness is realized by heating the food material with the upper and lower graphite plates and simultaneously heating it with the microwaves.

    • PROBLEM TO BE SOLVED: To provide a frying machine which is compact, can reduce the amount of oil to be used, prevents frying scums from being heated by a heater, and can prevent the generation of smoking or the carbonization of the oil accompanying the heating from occurring as well.
      SOLUTION: This frying machine has an oil tank having a double tank structure through which a cooking oil 12 can be circulated. One of the oil tanks is formed into a larger cooking tank 16 having a shallower depth and a larger flat area, and the other is formed into a heating tank 18 having a relatively deeper depth, and a smaller flat area. Then, the cooking oil 12 which is heated by the heater unit 20 arranged in the heating tank 18 can be circulated and distributed to the cooking tank 16.

    • PROBLEM TO BE SOLVED: To provide a fryer which can efficiently perform oil-draining, does not splash oil or does not emit an odor, an also, can suppress the deterioration of the oil. SOLUTION: This fryer 10 is equipped with an oil tank 12 for cooking fries. In the fryer 10, a lid member 40 which seals the opening on the upper surface of the oil tank 12 is openably formed, and a frying basket 26 in which fires are placed is formed in a manner to be detachable from the lid member 40. At the same time, the frying basket 26 is formed in such a manner that the frying basket 26 may be vertically movable while interlocking with the opening/ closing motion of the lid member 40. Thus, the fryer is constituted in such a manner that the frying basket 26 may be dipped in the oil when the lid member 40 is closed, and the frying basket 26 may be taken out to the outside of the oil when the lid member 40 is opened.
