摘要： PURPOSE:To obtain the subject material, having high solubility and excellent in color and odor by heating skinned soybeans, then defatting the soybeans, adding a reducing agent to the defatted soybeans, extracting the soybeans with water, precipitating the extract with an acid, neutralizing the resultant precipitates, adding a surfactant and drying the obtained substance. CONSTITUTION:Skinned soybeans are heated so as to inactivate lipoxygenase (at preferably >=80 deg.C) and then defatted to provide defatted soybeans. A reducing agent (e.g. cysteine, cystine or sodium sulfite) in an amount of >=0.001wt.%, preferably 0.001-0.3wt% based on the above-mentioned defatted soybeans is added to extract the soybeans with water. The resultant extract is subsequently precipitated with an acid and neutralized, and a surfactant (e.g. lecithin or sorbitan ester of a fatty acid) in an amount of >=0.2wt.%, preferably 0.2 to 2wt.% based on the solid content is then added thereto. The obtained substance is subsequently dried to afford the objective material.

When immersed, the seeds float on the water, weighing approximately double due to water absorption. A bleaching process, whose objective is sterilization, is not essential, however, it is usually carried out by immersing the seeds in a ca. 0.2-0.3% solution of bleaching powder for 3-5hr. A sodium hyposulfite solution of ca. 0.01% concentration may also be used. When the bleaching process is completed, the resultant seeds are accumulated in several tiers on a water-permeable vessel with net-like dish at the bottom followed by putting in a growing chamber at 15-30 deg.C to effect germination.
