    • PURPOSE:To obtain cyclodextrin with improved production ratio, by adding water to one or more substances selected from starch (derivative), modified starch, etc., to adjust the concentration to a specific value, liquefying the substances with a cyclodextrin producing enzyme, cyclizing the resultant substances and separating the cyclodextrin by membrane concentration. CONSTITUTION:Water is added to one or more substances selected from starch, e.g. potato starch, starch composition fraction, e.g. amylose, modified starch, e.g. roasted dextrin, oxidized starch etc., starch derivative, e.g. starch phosphate, etc., physically treated starch and alpha-starch to adjust the concentration to 1-5%. A cyclodextrin producing enzyme corresponding to 5-15THU/g starch amount of enzyme is reacted to liquefy the adjusted substances and cyclization reaction is subsequently carried out without inactivating the enzyme. The formed cyclodextrin is then separated with a cellulose acetate base tubular type reverse osmosis membrane, having about 50% desalting ratio, etc., by membrane concentration to afford the aimed cyclodextrin at >=2:1 ratio of alpha-cyclodextrin to beta-cyclodextrin with improved production ratio.
