SOLUTION: A method for modifying the functionality of a carbohydrate food material includes: a process of mixing a raw material carbohydrate food material singly or combining at least two kinds, and roasting the product while keeping a powdery state or a state of glass transition so as to add solubility and/or antioxidative property and modify the functionality. The raw material carbohydrate food material is monosaccharide, oligosaccharide, starch, or thickening polysaccharides. The modified carbohydrate food material artificially added with solubility and/or antioxidative property is provided. Furthermore, a modified carbohydrate food material as a processed product added with solubility and/or antioxidative property, and flavoring quality is also provided.

SOLUTION: Hydrogen of one or more hydroxyl groups of cyclodextrin (CD) is replaced with pyridinio group to be used as pyridiniocyclodextrin (CD) polymer. The polymer is obtained by modifying the CD with the pyridinio group after insolubilizing the CD to be a polymer, or insolubilizing the CD after modifying with the pyridinio group. The obtained pyridinio-CD polymer is used as a separation agent in a column to fractionate naphthalene carboxylic acids (NDC). A target NDC is separated from isomers with using sodium bicarbonate or the like as a solvent according to a liquid chromatography or the like method. The NDC has ten kinds of isomers. 2, 6-NDC among the isomers which is a material for liquid crystal, polyester fiber, etc., can be efficiently separated by this method.
