    • PROBLEM TO BE SOLVED: To provide a biodiesel fuel production system and a biodiesel fuel production method capable of carrying out efficient purification with a simple apparatus configuration without the need of washing by water in the purification of crude biodiesel fuel.SOLUTION: A biodiesel fuel production system 1 includes: a raw material tank 10; a transesterification apparatus 20; an aeration apparatus 30 to remove alcohol; and an impurity removal apparatus 40 to remove impurity from crude biodiesel fuel with the alcohol removed. The aeration apparatus 30 includes: an aeration tank 31 that is configured to be able to pool crude biodiesel fuel and heat it to a predetermined temperature, and carries out the aeration by gas; a gas supply unit 32 to supply gas to crude biodiesel fuel; an aeration unit 33 that is connected to the gas supply unit 32 and provides aeration to crude biodiesel fuel; and a cooling tower 34 to cool the gas after aeration and recover alcohol.

    • PROBLEM TO BE SOLVED: To provide a low-cost, low trans plastic fat composition with reduced trans fatty acid for rolling-in, which has a wide working temperature range for rolling in dough, allowing a croissant to be produced with excellent floating and meltability in the mouth with good flavor, and imparting the sweet aroma and rich taste of domestic butter.SOLUTION: The plastic fat composition for rolling-in comprises: a trans fatty acid content of 5 wt.% or less; and a storage elastic modulus of 70 or more for a shear strain of 0.1% relative to a storage elastic modulus of 100 for a shear strain of 0.01% measured at 5°C. In the entire plastic fat composition for rolling-in, 40 to 95 wt.% fat is contained. In the entire fat, 32 to 48 wt.% lard, 5 to 10 wt.% transesterified oil of palm stearin, 22 to 45 wt.% transesterified oil of mixed oil of laurin-based oil and palm-based oil, and 8 to 25 wt.% vegetable oil having a melting point of 25°C or lower. In the oil phase, 9 to 15 wt.% triglyceride represented by SSS, 2 to 8 wt.% triglyceride represented by SUS, and 40 to 50 wt.% total triglycerides represented by SSU and USU are contained. The oil in the oil phase has a rising melting point of 32 to 38°C. A laminar expanded food product is produced using the plastic fat composition for rolling-in.
