    • The invention concerns a method of improving the taste and smell of, and/or accelerating the ripening process of aromatic and odorous substances in foodstuffs and luxury foods and of all substances intended for oral ingestion. Magnetic or electrical fields of automatically or manually variable frequency are made to act on organoleptically relevant substances present in foodstuffs, thereby producing in these substances substance-specific resonances which cause the separation of complexes formed by these substances and/or of complexes of the organoleptically relevant substances with their solubilizers, such as water or fats. To this end, the invention proposes a device for carrying out the method. In one embodiment, the device comprises a housing (1) in the form of a wine cooler with a chamber (5) for accommodating drinks bottles (51). Elements for generating magnetic or electrical dynamic fields and the associated electronic control system (4) are disposed in the housing.

    • Microorganisms are deactivated in a food product (10) using an electrode (16) placed into electrical contact with the food product. A current signal is applied to the electrode during a specified time period, causing a deactivating charge to build up on the first electrode (16). An electrical field results from the deactivating charge having an electric field strength of at least 5.000 volts/cm. Substantially all of the residual charge is removed from the first electrode (16) during a discharge period, such that an approximately zero net charge is delivered to the first electrode following the discharge period, thereby reducing electrophoretic side effects. The current signal causes an electrical double layer at the electrode to charge to a prescribed voltage. One embodiment, the prescribed voltage does not exceed a reaction voltage of a prescribed reacting material species for more than a prescribed threshold period, thereby reducing electrochemical reactions within the food product.

    • A pulsed field treatment apparatus for applying pulsed electric fields to pumpable foodstuffs has an electric field treatment chamber (108) with a first electrode (302) and a second electrode (308). A solid dielectric separator (318) having a dielectric nonconductive spacer separates the first electrode (302) from the second electrode (308) externally of the chamber and has a minimum surface pathway length between the first electrode (302) and the second electrode (308) of at least twice the minimum distance between the first electrode and the second electrode within the chamber. An inlet conduit (304) is connected to the chamber for introducing pumpable foodstuffs and an outlet conduit (306) is also connected to the chamber for discharing pumpable foodstuffs which have passed through the electric field treatment chamber. A high voltage pulser (112) generates electric pulses at the rate of at least 0.01 pulses per second to the first and second electrodes (302, 308) which are excited by the electrical pulses and produce an electric field having an electric field strength of at least 25,000 volts per centimeter. A pump connected to the inlet conduit forces the pumpable foodstuff through the electric field treatment chamber at a rate such that all of the pumpable foodstuff is subjected to at least one electric field pulse during its transit through the electric field treatment chamber.
