    • PROBLEM TO BE SOLVED: To provide an apparatus for transporting a target object within a pulsed light sterilization chamber via a transmissive carrier which allows for sterilization of the target object without obstruction or shadowing by the transmissive carrier.
      SOLUTION: The apparatus for carrying a target object 52 having a plurality of surfaces, within a pulsed light sterilization chamber 10 including a treatment zone 54 within which pulsed sterilizing light is emitted. The apparatus includes: a plurality of transmissive rollers within the treatment zone 54 detachably coupled to the target object 52; and an operating means 30 being a moving means coupled to the transmissive rollers for moving the target object 52 on the transmissive rollers through the treatment zone 54, where the plurality of surfaces of the target object are sterilized by the pulsed sterilizing light in the treatment zone 54 and at least a portion of the pulsed sterilizing light passes the transmissive rollers before reaching the target object 52.

A pump connected to the inlet conduit forces the pumpable foodstuff through the electric field treatment chamber at a rate such that all of the pumpable foodstuff is subjected to at least one electric field pulse during its transit through the electric field treatment chamber.

    • An improved method and apparatus for deactivating organisms on the surface of a perishable food product, or on the surface of a packaging material includes, in one embodiment, a heating device (700, 704) for heating a surface of the food product or packaging material to a prescribed temperature, and a flashlamp system (30) for illuminating the surface of the food product or packaging material with light (28) having frequencies within a prescribed frequency range. At least a portion of the light with which the food product or packaging material is illuminated deactivates organisms substantially at the surface of the food product or packaging material. In another embodiment, the method includes applying a chemical agent to the surface of the food product or packaging material, instead of or in addition to the heating of the food product or packaging material. A further embodiment employs modified atmosphere packaging in combination with illumination of a food product contained therein.

    • Microorganisms are deactivated in a food product (10) using an electrode (16) placed into electrical contact with the food product. A current signal is applied to the electrode during a specified time period, causing a deactivating charge to build up on the first electrode (16). An electrical field results from the deactivating charge having an electric field strength of at least 5.000 volts/cm. Substantially all of the residual charge is removed from the first electrode (16) during a discharge period, such that an approximately zero net charge is delivered to the first electrode following the discharge period, thereby reducing electrophoretic side effects. The current signal causes an electrical double layer at the electrode to charge to a prescribed voltage. One embodiment, the prescribed voltage does not exceed a reaction voltage of a prescribed reacting material species for more than a prescribed threshold period, thereby reducing electrochemical reactions within the food product.
