    • PROBLEM TO BE SOLVED: To provide an apparatus which can successively, automatically, efficiently and accurately punch out an eyeball part containing much amount of components of fatty acids such as bonito and tuna, and can recover the eyeball part.SOLUTION: The apparatus for punching out and recovering the eyeball part includes an openable and closable head part support stand 2 and a body part support stand 3. An eyeball part-discharging hole 4 is formed in the head part support stand 2, and head part-nipping means 9 for positioning the eyeball part B of a fish body A on the eyeball part-discharging hole 4 are arranged at both sides of the head part support stand 2. An eyeball part-punching out blade 7 is arranged at the upper part of the eyeball part-discharging hole 4 to be freely lifted and lowered so that the eyeball part B of the fish body A may be punched out by the punching out blade body 7 and the punched out eyeball part B may be recovered through a sucking hose 25 connected to and communicated with the lower face of the eyeball part-discharging hole 4, and the fish body A is discharged downward after the punching out treatment of the eyeball part B by simultaneously releasing the fish body A from the head part support stand 2 and the body part support stand 3.

    • PROBLEM TO BE SOLVED: To provide a technique capable of automating killing of fish while keeping heart function, and automating a removal work of the larger amount of blood compared to heretofore even in the large fishes such as yellowtail, great amberjack, amberjack or tuna.
      SOLUTION: There is provided a method of removing the blood of fishes while keeping alive their heart functions. The method includes the steps of: posturing the fish so as to place its head lower than its tail; cutting the arterial vessels of medullary and the vicinity thereof by a cutting blade penetrated through branchia from the side of a fish body; opening a fish mouth and fixing; composing a closed space by covering the fish head including a cut place with a tubular fish body housing; and sucking/collecting the blood by generating a negative pressure in the closed space.
