    • PROBLEM TO BE SOLVED: To obtain a quality-meat-attached backbone part suitable as a material for minced fish, cutting off a fin part and Mefun (a kidney) from a meat-attached backbone part obtained when filleting a fish into three pieces.SOLUTION: The meat-attached backbone part is conveyed by a pair of upper and lower conveyor belts 2 and 3 while being sandwiched and held between the belts. When the backbone part reaches a fin cutter 4 arranged in a midstream of the conveyance, a belly part is pushed by a first pushing lever 11 while a back part of the meat-attached backbone part is received and stopped by a receiving and stopping lever 12, and the back skin from a back fin to a tail fin is cut off by the fin cutter 4. Then, when the meat-attached backbone part reaches a kidney cutter 5, the belly part of the meat-attached backbone part is pushed by a second pushing lever 17 to position the kidney-attached backbone section of the meat-attached backbone part at a cutting position by a kidney cutter 5. The kidney-attached backbone section is cut off by the kidney cutter 5 to obtain the quality-meat-attached backbone part.

    • PROBLEM TO BE SOLVED: To provide a technique capable of automating killing of fish while keeping heart function, and automating a removal work of the larger amount of blood compared to heretofore even in the large fishes such as yellowtail, great amberjack, amberjack or tuna.
      SOLUTION: There is provided a method of removing the blood of fishes while keeping alive their heart functions. The method includes the steps of: posturing the fish so as to place its head lower than its tail; cutting the arterial vessels of medullary and the vicinity thereof by a cutting blade penetrated through branchia from the side of a fish body; opening a fish mouth and fixing; composing a closed space by covering the fish head including a cut place with a tubular fish body housing; and sucking/collecting the blood by generating a negative pressure in the closed space. The apparatus for carrying out the method is also provided.
