    • PROBLEM TO BE SOLVED: To produce a new sweet Sake(Japanese fermented, mildly alcoholic beverage made from rice), having a suppressed odor of ethyl alcohol, a matured taste of ethyl alcohol, excellent in bacteriostatic actions and cooling effects and useful for needless, pickles, etc., by including a prescribed amount of the ethyl alcohol therein. SOLUTION: This new sweet Sake has 40-80(vol./vol.)% ethyl alcohol content. The new sweet Sake preferably has 40-60(vol./vol.)% ethyl alcohol content, 0.5-30(wt./vol.)% total saccharide concentration and further one or more consisting of the group of an ethyl alcohol-containing solution treated with a Koji(yeast), tannin and a lysozyme. Furthermore, the new sweet Sake is produced by adding at least a part of the ethyl alcohol which is the ethyl alcohol- containing solution treated with the Koji to the material in any stage of raw material treatment for producing the sweet Sake, charging, scarifying, aging, compressing and separating of unrefined liquor into the liquor and less, refining and a product.

    • PURPOSE: A conventional still is provided with, on its top, a rectification column having a plurality of rectification trays and the alcohol steams from individual trays are appropriately introduced into the cooler whereby fusel oil and higher fatty acids are largely removed in the distillation process.
      CONSTITUTION: The fermentation mash 2 is placed in the boiler 1 of the still and alcohol is distilled. The alcohol vapor is introduced into the water at low temperatures in the fractionation chambers 31f, 32f, 33f in the rectification column 3 to remove the high-boiling fractions of fusel oil and higher fatty acid, then the vapor is cooled with cooler 4 into liquid. Thus, fusel oil and higher fatty acids are largely removed during the distillation process.
