摘要： A lattice cutting or slicing machine includes a multi-knife lattice cutting plate mounted in-line along an hydraulic flow path through which vegetable products such as potatoes are propelled in single file by a hydraulic fluid such as water. The lattice cutting plate is orbitally driven for engaging in succession each of the multiple knives thereon with the vegetable product to form lattice cut slices wherein successive generally corrugated cuts are angularly oriented typically perpendicular to each other, and further wherein the depths or troughs of the corrugated cuts on opposite sides of each slice intersect in the preferred form to define a pattern of corrugations interrupted by small openings.

摘要： A rotary cutter (10) is provided for cutting elongated extruded strips (16) of a food dough product or the like on a conveyor (14) into individual strip pieces of selected length and having angular cut ends simulating the overall appearance of French fry strips cut from whole potatoes. The rotary cutter (10) comprises a pair of rotary support wheels (28) mounted on opposite sides of the conveyor (14) for rotation on longitudinally spaced axes extending normal to the direction of conveyor travel. A plurality of cutter elements (26) extend transversely and angularly across the conveyor (14) with their opposite ends carried by the rotary support wheels (28) generally at the peripheries thereof for engaging and cutting conveyed extruded strips into individual and angularly end-cut strip pieces of selected length. A drive motor (46) rotatably drives one of the support wheels (28) for displacing the cutter elements (26) into engagement with the extruded strips (16) at a velocity closely matching the conveyor velocity.

摘要： A loop cutter knife fixture for cutting vegetable products such as raw potatoes into spiral or helical loops. The knife fixture includes a circular blade holder adapted to be rotatably driven within a vegetable product flow path. The blade holder includes a central core cutter in combination with a spiral base plate defining a radial slot between axially spaced upstream and downstream ends thereof. Small slits are formed in this base plate for seated reception of preferably multiple U-shaped strip blades, which are in turn overlaid and clamped in place beneath a generally pie-shaped slab blade having a sharpened knife edge exposed at the base plate radial slot and held in place by preferably multiple clamp screws. The strip blades and/or the slab blade are formed from an inexpensive material, such as sheet metal or the like, whereby blade changeover is quick and economical.

摘要： An improved production process for preparing parfried and frozen French fry potato products with reduced crumb generation particularly upon finish preparation as by finish frying. Potato products such as French fry strips are cut, blanched and parfried, followed by a water treatment step as by applying a light spray or mist of water at ambient temperature and preferably at a rate selected to avoid any substantial overspray. The potato products are frozen for shipment and/or storage awaiting finish preparation. Upon finish preparation as by finish frying in hot oil, the potato products exhibit substantially reduced crumb generation. The improved process is particularly useful when parfrying and/or finish frying the potato products in a liquid or substantially non-hydrogenated oil, such as a zero grams Trans Fat (ZGTF) oil, with dramatically reduced crumb generation upon finish fry preparation while retaining a substantially optimized balance of sensory characteristics.
