    • An apparatus for the substantially continuous processing of forming cheese. In one processing method the apparatus can be utilised to process cheese milk (coagulum) through to particulate cheese. The apparatus comprises a de-watering or cheddering tower 5 including a column 18 having an inlet 4 in which a pillar of cheese can fuse. Drainage manifolds 8 allow the whey to discharge. The column 18 joins with a detritising cutting means 10 provided at the lower end of the column 18. The cutting means 10 removes cheese from the lower end of the pillar as it makes contact therewith. Simultaneously and consequently the cutting means 10 forms a quantity of particulate cheese which is deposited into conveyor means 12 for transport downstream as indicated by arrow 14. Secondary detritising means 20 may be included and preferably both detritising means 10, 20 are mounted in a hopper 11 with the conveyor 12 at the lower end thereof. The inlet 4 may be fed from a hopper 1 incorporated in the inlet 4 to enable particulate cheese to be charged into the column 18. In this manner the apparatus can be utilised in a second processing method to re-process fused or particulate cheese through a further or secondary fusion step back to particulate cheese. Typically this method or processing step is utilised as part of downstream processing such as salting. A plant may involve more than one f the apparatus joined in line to carry out the aforesaid processing methods or steps.

    • An apparatus for and method of processing cheese milk and producing cheese therefrom. The apparatus comprises a pair of vats 3, 9 each having an inlet 1, 16 and an outlet 15, 13. The outlet 15 of the first vat 3 is connected to the inlet 16 of the second vat 9 by a conduit 14. Preferably the second vat 9 is mounted lower than the first vat 3 to enable a gravity feed therebetween. A de-watering means 5 to remove whey as described below is provided between the two vats 3, 9, the de-watering means 5 being controlled by a pair of valves, 6, 7. One valve 6 is provided in an exhaust 10 from the de-watering means 5 and the other valve 7 is provide between the de-watering means 5 and the second vat 9. Both vats 3, 9 have stirring means, 4, 12 mounted therein. The stirring means 4 in the first vat 3 is designed and mounted to also tend to cut any coagulum that may form therein. The stirring means 12 in the second vat is designed and mounted to agitate and provided substantially no cutting of any coagulum that may form therein. In use a quantity of cheese milk is processed in the first vat 3 until a mixture including whey is formed. This is discharged to the second vat 9 via the de-watering means 5 which removes a required amount of whey from the mixture. The reduced whey mixture is further processed in the second vat 9 until is discharged for further downstream processing. The two stage process enables the each of the vats, 3, 9 to be prepared/cleaned for a further charging while the other vat is enabled in the cheese production.

    • A tower block cheese forming apparatus and method. Known towers (1) of this type have been limited in height. This tower is of a height substantially greater than known towers and this enables increased through-put. The cheese column of this tower has a height extension (2) or (2a) provided on the perforated column (2) characteristic of these towers with in one embodiment the extension (2a) being free of any drain perforations (4). In a second embodiment the column extension including drain perforations (4). In this latter form the outer casing of the tower is also extended and the tower may be fabricated as a unitary body (1a). In a modification of the invention a column extension (2a) is provided together with a seal (5) which enables adaption of existing towers (1) to an increased height in accordance with this invention.

    • An apparatus and method for manufacturing mozzarella cheese. Cheese curd is cooked and stretched in a heated water bath (2), augers (3) mounted therein transporting the curd therethrough to an outlet (8). The outlet (8) conjoins with a conduit (7), controlled by valves (9), to provide a pressurized supply of curd to a bank of fill-heads (10). Each fill-head (10) includes two volumetric metering compartments (13) which provide a dual discharge at an outlet (12) thereof. Hoops (14) are placed at the outlets (12) to be charged from the fill-heads (10). A hoop (14) can have a divider (19) inserted therein to divide the hoop (14) into two compartments (20 and 21) corresponding to those of the fill-heads (10). Before charging plastic liner bags (50) are placed in each hoop (14) or hoop compartment (20 and 21) as appropriate. The liners (50) are subsequently vacuum sealed and then immersed while in their loops (14) in a cooling bath (32). After the cheese has sufficiently solidified the hoops (14) are unloaded from the bath (32) and the sealed cheese blocks (47) removed from the hoops.
